Crocus sativus
Crocus sativus, commonly known as saffron crocus or autumn flowering crocus, is a flowering plant in the iris family (Iridaceae). It is best known for producing saffron, the world’s most expensive spice, which is derived from the plant’s vivid red stigmas. The plant blooms in autumn, with purple flowers that have three red stigmas and yellow anthers. Crocus sativus thrives in dry, sunny climates with well-drained soil and is primarily cultivated in regions such as Iran, India, and the Mediterranean, though it will grow successfully in Ireland.
